Risotto beetroot & gorgonzola cheese

Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.

The recipe of the day is: risotto beetroot & gorgonzola cheese.

Ingredients:

(Serve 4 people)

300 g of rice
400 g of cooked and blended beetroot
1 onion

4 tablespoon of extra virgin olive oil
200 ml of white wine
200 g of blue cheese (gorgonzola)
cream to your liking
salt to taste

For the broth
2 l wather
1 onion
2 carrots
2 celery stalks
6 tablespoon of extra virgin olive oil

salt to taste
