Pinocchio has been a friend of Ireland AM for many years. We would like to share the recipes Giuseppe Crupi, director of the Pinocchio Italian Cookery School, prepared live on the program to show how to embrace traditional dishes.
The recipe of the day is: Cannoli Siciliani.
The traditional one is made with a fried wafer shaped like a tube filled with sheep’s Ricotta Cheese. This sweet was born in the area of Caltanissetta as Saracen evolution of an ancient recipe appreciated since the time of Cicero. Have you ever tasted it?
Ingredients for about 30 cannoli:
260 g 00 flour
30 g lard
1 teaspoon of salt
10 g white wine vinegar
20 g sugar
5 g unsweetened cocoa powder
20 g eggs
60 g marsala
(fry in seed oil).
For the stuffing:
1 kg sheep ricotta
130 g sugar
80 g chocolate chips.
To garnish:
chopped pistachios to taste
icing sugar to taste
candied fruit to taste.
